Cinnamon-Pecan Date Cookies
Ingredients:
1 cup Medjool dates (pitted)
1 cup pecans
1 tbsp chia seeds
1 tsp Himalayan salt
1 tsp ground cinnamon
1 tsp vanilla bean powder
Instructions:
Prepare the Ingredients:
If your dates are dry, soak them in warm water for 10 minutes, then drain thoroughly.
Blend the Mixture:
In a food processor, combine the dates, pecans, chia seeds, Himalayan salt, cinnamon, and vanilla bean powder.
Pulse until the mixture comes together into a sticky, slightly chunky dough. Be careful not to over-process; you want some texture from the pecans.
Form the Cookies:
Scoop out roughly 2 tablespoons of dough for each cookie. Roll the dough into a ball and flatten it into a cookie shape. Repeat until you have 9 cookies.
Chill:
Place the cookies on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up.
