Cinnamon-Pecan Date Cookies

Ingredients:

  • 1 cup Medjool dates (pitted)

  • 1 cup pecans

  • 1 tbsp chia seeds

  • 1 tsp Himalayan salt

  • 1 tsp ground cinnamon

  • 1 tsp vanilla bean powder

Instructions:

  1. Prepare the Ingredients:

    • If your dates are dry, soak them in warm water for 10 minutes, then drain thoroughly.

  2. Blend the Mixture:

    • In a food processor, combine the dates, pecans, chia seeds, Himalayan salt, cinnamon, and vanilla bean powder.

    • Pulse until the mixture comes together into a sticky, slightly chunky dough. Be careful not to over-process; you want some texture from the pecans.

  3. Form the Cookies:

    • Scoop out roughly 2 tablespoons of dough for each cookie. Roll the dough into a ball and flatten it into a cookie shape. Repeat until you have 9 cookies.

  4. Chill:

    • Place the cookies on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up.

  5. Serve:

    • Enjoy straight from the fridge for a chewy, satisfying treat!

Storage:
Store the cookies in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
